Weekend Recap & Recipe

This weekend was just SO beautiful here in South Florida!  It was in the 60's during the morning and barely broke 80!  We had all the doors and windows open to the house the entire weekend.  It was so nice to air everything out and just enjoy the fresh air.

We also did some fall cleaning.  Husband washed all the outside windows while I did the outside and just freshened up everything.  After all, October is our spring (at least that's what the weather feels like).

Lallie attended a birthday party this weekend.  She was supposed to wear a costume, but I'm slacking and haven't gotten her one yet, so I whipped up this skirt real quick Saturday morning and paired it with a Halloween shirt (with the long sleeves cut out because it's not cold enough).

Lallie said she would like to be a witch for Halloween.  This was her own idea, not ours!  However, we have a feeling that after a recent event coming up, she will want to be a princess instead, much more towards our taste!  ;-)  (It's a secret, I'll tell you next week!)

At the birthday party, we got to do some crafts including pumpkin painting.  Lallie's pumpkin was a Mardi Gras design as it was pink and purple paint with silver rhinestones, gold glitter and a pink feather.  Tres chic!

Lallie also discovered that markers can be used for things other than paper.  Not that they should be used on other things, but that's not how it works in her mind.  Daddy all the sudden heard "Daddy, my mouth tastes funny."  Hmm, I wonder why?

We're really enjoying the fall weather.  Last night, we ate on the back porch next to the pool and ate ratatouille and chicken marengo (a recipe we've had in the family from my grandmother).

The ratatouille had asparagus, onion, eggplant, zuchinni, squash and cherry tomatoes, drizzled in olive oil and seasoned with Italian seasoning, salt and pepper.  Roasted in the oven at 400 degrees for one hour.
The chicken marengo:  just brown the chicken (I did three breasts, no skin, cut in half to make six pieces) in olive oil and drain.  Add one can crushed tomatoes, one cup of white wine (I like real white wine, not cooking wine, really flavorful), three cloves a garlic, salt and pepper.  Bring to a boil and then simmer for as long as your veggies are in the oven, letting some of the liquid boil off.
Serve with white rice.
SO yummy and defiantly fall-ish feeling, since we ate outside in the cool weather as the sun started to set.  It really was the perfect meal on the perfect evening!

We ended off the weekend by watching the newest Tinkerbell movie with Lallie and then Husband and I watched Back to the Future Part III (only the best trilogy of movies EVER!!!!)

  2. Well now that chicken and Ratatouille look devine. Might just have to try that one.
    Oh shoot......I hope it was a washable marker. We went to a birthday party last night and the cake had green icing on it. When we all smiled for the photo our teeth and lips were green. Nice....thanks a lot bakery.

  3. Okay that is hilarious! She was eating the markers?! Too funny! She looks darlin' in her outfit and love love the bows! Jealous of the cooler weather this past weekend. We were sweating up here with temps hovering near 90!
